Peut-on manger les légumes-racines crus?
En principe, les légumes racines comme la racine de persil, le topinambour, le salsifis et le panais peuvent se consommer crus. Pour le topinambour et le salsifis, il est recommandé d'augmenter progressivement la consommation, car ils peuvent provoquer des ballonnements. Il vaut donc mieux commencer par de petites quantités. On peut p. ex. agrémenter une salade verte ou de carotte d'un topinambour ou d'un peu de salsifis. Si l'on digère bien la salade, on peut alors augmenter les quantités.
